The vinegar is obtained from cooked grape must, that is aged by the naturally occurring fermentation of the vinegar and is gradually more concentrated by storing in progressively smaller wooden barrels made from different types of wood, and is thus subjected to a slow maturation process during which no flavouring or other agents are added. It acquires its earthy brown colour through the caramelisation of the sugar present when the grape must is being cooked.
