Some days you don’t need much to be happy. And for the others we got a true soulfood recipe for ya that will do just the job on those late summer autumn mornings.

Fresh, tart apples meet a coulis of berries that bring summer’s sunshine to the table. Served with some creamy (soy) yoghurt and some Crunchy with blueberries for some extra texture. It’s the simple things in life, right?

Ingredients for Autum in a Bowl (serves 2)

  • 500g (soy ) yoghurt
  • 2 small apples
  • 150g frozen strawberries
  • dash of salt
  • 1/2 tsp cinnamon
  • Organic Granola with Blueberries

How To:

  1. Pour frozen berries in a pot and heat at medium temperature with some water and a dash of salt. When the berries are warm enough, mash them or leave the sauce as is and season with cinnamon. Put aside and let sit.
  2. Cut the apples in bite-size pieces and mix each with 250g yoghurt.
  3. Top bowls with the coulis and some Crunchy.
  4. Enjoy!
