Healthy muesli muffins: have a guilt-free treat

Our healthy muesli muffins are made without any additional sugar and no wheat but still taste unbelievably great. Our secret ingredient: the Verival Heritage grains muesli with apples and apricots is great for baking delicious breakfast muffins. The Heritage grains muesli consists of wholegrain spelt, emmer and einkorn flakes, blended with apricots, diced apple and sultanas, that add an extra touch of fruity sweetness. Raspberries, peach and red currants refine the mixture. Your breakfast muffins will have a special bite to them and will taste extra fruity.
The recipe: Healthy muesli muffins

Ingredients
2 large eggs
150ml natural yoghurt
50ml vegetable oil
100g apple sauce
4 tablespoons honey
150g Verival Heritage grains muesli of your choice (we’ve used the Heritage grains muesli with apple and apricot)
1 teaspoon sodium carbonate
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon real bourbon vanilla
100g fresh fruit of your choice (we’ve used blueberries)
Method
- Preheat the oven to 150° Mix together all the dry ingredients (Verival Heritage grains muesli, spelt wholemeal flour, baking powder, sodium carbonate, cinnamon, vanilla) in a bowl. In a second bowl stir together the wet ingredients (eggs, yoghurt, vegetable oil, apple sauce and honey).
- Mix the wet ingredients together with the dry ingredients. Make sure not to overmix the batter, it should only be stirred until all the ingredients are combined. Add the fresh fruit.
- Line a 12-hole muffin tin with 12 muffin cases. Divide the batter between the cases.
- Bake for 25-30 mins until golden and well risen, and a skewer inserted into the centre of a muffin comes out clean. Remove from the oven, transfer to a wire rack and leave to cool.
