Versatile in its use, easy to prepare and of high nutritional value, a member of the knotweed family, with high protein and starch content. Can be used coarsely ground or milled in the kitchen, only suitable for limited use in baking, but can be baked when mixed with other flours.

Add 1.5 to 2 cups of water to 1 cup of buckwheat, add 1 tbsp of butter, season with salt. Boil for 5 minutes, then leave to simmer over a low heat for 20-30 minutes.
