Lentils are members of the pea family. They were cultivated almost ten thousand years ago in Egypt and are among the oldest cultivated plants known to man. Our green lentils are rich in iron and phosphorus, and in vitamins A, B1 and B2. Suitable as a side-dish or salad. However, they can also be used in soups, as a spread or puree. Soak the lentils in water overnight, then discard the water. Rinse the lentils in a sieve and cook them in water for approx. 10 minutes (three times as much water as lentils). Add a bay leaf to the cooking water, but add salt only once the lentils are cooked, as otherwise they will remain hard.
