Durum wheat semolina is obtained from selected durum wheat. This durum wheat has a gritty-hard structure, glassy in appearance and with a yellowy gold colour. Durum wheat semolina is characteristically fluffy yet retains its particular bite. The natural growing conditions in Sicily, where our pasta is made, produce fully mature durum wheat semolina that is only mixed with water to make pasta dough, and then meticulously dried.
