Healthy Christmas Recipes: At the Verival Christmas Bakery

Muesli, Porridge and Crunchy – our breakfast products are quick and easy to prepare, but you can also use them to create really delicious recipes. Lena Fuchs from the blog “Mein leckeres Leben” shows you how. We take her on a culinary journey, from her highlights in 2019 to this Christmas season. In addition we present you her three newest Christmas recipes prepared with our Verival breakfast range.

Filled cocoa date cookies or also “Healthy Rawreos”

Ingredients

Cookie dough

Stuffing

  • 200 g Verival cashews (soaked in water for 30 minutes)
  • 100 g coconut flakes
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/2 tsp Vanilla, ground

Instructions

  • For the dark 'cookie dough', put the almonds together with the walnuts, muesli mixture, cocoa powder, cinnamon, salt and dates into a food processor and mix all the ingredients until they are a smooth dough.
  • Place the mixture on a piece of baking paper. Place a second sheet of baking paper on top and roll out the mixture until it is about 0.5 cm thin. Place them into the
    fridge for 30 minutes.
  • In the meantime, add the cashew nuts with the coconut flakes, coconut oil, vanilla
    and maple syrup to the food processor. Puree the mixture until it has a creamy
    consistency – possibly add some more water.
  • Cut out the cookie mass to round cookies with a diameter of approx. 4 cm. Knead the mixture together again and again and roll it out until it is used up. Then assemble the cookies, place approx. 1 teaspoon of coconut filling on one cookie, place a second one on top and press firmly. Keep the cookies in the refrigerator.

Pumpkin Porridge Energy Balls

Ingredients

Instructions

  • Put all ingredients into a food processor and mix until no larger pieces are left.
  • Form small balls out of the mixture with wet hands. Roll the balls in porridge mixture or chopped pumpkin seeds if you like. Keep them in the fridge.

Healthy chocolate crossies

Ingredients

Instructions

  • Melt the cocoa butter with the cocoa powder over a water bath and stir until smooth.
  • Add the cinnamon, the chopped dates, maple syrup and a pinch of salt.
  • Finally add the cornflakes and the muesli.
  • With two teaspoons place small heaps on a baking tray with baking paper.
  • Let the chocolate crossies set in the fridge for at least 30 minutes. Store in a cool
    and dry place.


Since the beginning of 2019 we have been working together with the lovely Lena Fuchs from “Mein leckeres Leben” and she regularly creates delicious recipes with our Verival breakfast products. Together with Lena we reviewed the culinary year 2019 and want to introduce you to her and her passion for baking:

What is your favourite Verival product?

I love the Heritage Grains Muesli with Berries, I always mix it into my breakfast yoghurt. Now in the cold season we really like the porridge mixes, especially the poppy-seed plum porridge. We also love the Verival dates and the maple syrup very much.

How do you start the day?

First of all, I open the window in my bedroom and take a deep breath. Then I have my classic first oat milk cappuccino, which I like to drink on the couch with my boyfriend and chat about the upcoming day.

Which recipe with Verival products did you like the most so far?

Pooh… everyone! The Porridge berry slices were a little highlight for me, but also the cocoa date cookies and the chocolate crossies, especially now in the upcoming Christmas season.

What was your culinary highlight in 2019?

A few weeks ago, we had a roasted butternut pumpkin from the oven with nuts and maple syrup (by the way also from Verival). Hach, that was our little aroma highlight. Since then we have had this dish almost every week (the recipe is of course also on my blog).

What is your ultimate baking tip?

Love & devotion to the ingredients and the preparation. It’s as simple as that 😉

What should not be missing in the Christmas season?

Bake lots of homemade biscuits and roasted almonds with cinnamon and maple syrup in the kitchen (with a Christmas playlist in the background). Together we watch Christmas movies like ‘The Holiday’ and ‘Love Actually’ and also a girls evening with a ‘Bridget Jones Marathon’ should not be missing. Many cozy walks through the woods belong to the cold season anyway and then I really like to make a Christmassy door wreath. And if the weather is good, a visit to my parents-in-law who live on a snow-covered mountain in Carinthia and my favourite winter sport – skiing.

What was your favourite food trend of the year 2019? What do you think will happen in 2020?

Reduce/avoid food waste. I was very interested in this topic in 2019. Every food is valuable and I think it’s so great that the ‘Zero Waste’ trend goes on and on. For example, you can make a super delicious pesto from carrot green or I can simply cook vegetable broth from vegetable cuttings/shells. I think this sustainability aspect will fortunately become even stronger in 2020.

Baking or cooking?

Both! …but I have a slightly bigger passion for baking because I am a little sweet tooth.

What should never be missing in your kitchen?

My big, colourfully filled fridge (lots of seasonal fruit & vegetables), my coffee machine and of course many breakfast products from Verival 😉
